This vegan salad may seem like it has a lot of ingredients, but trust me if I tell you that it is very easy to combine.
Here are the salad ingredients that you will need
strawberries: For salads you will need fresh strawberries, but for dressing you can use fresh or frozen. The more mature, the better! For the greatest flavor, look for strawberries, red all over, firm to the touch with a fresh green top and no bruises. About 2-3 medium slices of strawberry per serving is a good serving to stick with. Cut them however you want!
Baby spinach: We love baby spinach for this salad. It is rich in vitamins A, C, K and folate, as well as minerals such as iron, calcium and potassium. A creamy salad is also suitable, as are mixed greens or arugula for a more peppery bite.
Pecan: Strawberries and pecans are the perfect pair! Pecans are also rich in fiber, minerals and rich in heart-healthy monounsaturated fats. Add them to a salad or lightly toast to reveal their warm nutty flavor.
Feta (we used vegetable!) – Feta cheese is optional, but the rich salinity gives this salad another layer of texture and flavor. We found a vegan plant-based veta at Trader Joe’s and are now obsessed! It tastes just like a milk-based feta that we know and love well. This is perfect, whether you want to cut down on dairy products or avoid them.
Sliced red onion: Slightly crunchy and sweet with a slightly sharp bite, red onion balances well with strawberries.
Red wine vinegar: A great addition to strawberries, like red wine, red wine vinegar also has beneficial antioxidants.
Honey: Raw honey contains beneficial nutrients such as amino acids and B vitamins, including B6, thiamine, niacin, riboflavin and pantothenic acid, which are lost in the processing of commercial honey when heated. I used Manuka Honey from Flora which is non-GMO, stable and unpasteurized.
Shallots: We like to add a slice of shallots to the dressing to compensate for the sweetness of the strawberries. In the same family as garlic and onion, but much more delicate, shallots will insist in the dressing the longer it sits, and will give a hint of onion flavor. Shallots are completely optional if you prefer a pure strawberry flavor.

How to cook strawberry vinaigrette
Making this spring dress is very easy! You don’t even need to cut much. Just put everything in a food processor or blender and mix until smooth.
If you prefer your dressing a little more texture, you can pulsate it and stop when it reaches a consistency that you like.
Store strawberry vinaigrette in the refrigerator until ready to serve.

Strawberry pecan salad with strawberry vinaigrette
This simple but fragrant salad with superfoods, rich in spicy ripe strawberries, is rich in nutrients such as vitamin C and antioxidants. The use of Udo 3 6 9 vegetable oil blends in strawberry vinaigrette provides an increase in omega-3 fatty acids.

- 1 cup strawberries
- 2 spoons red wine vinegar
- 1 teaspoon shallots crushed (OPAKATNA)
- 1 teaspoon honey
- 1/8 cup Udo oil 3-6-9 mixture
- ¼ tsp black pepper
- ¼ tsp salt
INSTRUCTIONS

Preparing the dressing: place all the ingredients for the dressing in a blender or mini-combine and process until smooth. Set aside or refrigerate until serving.

Salad cover: divide the greens between the bowls. Top with fresh chopped strawberries, pecans and feta. Serve with strawberry vinaigrette.
Notes
Instead of red wine you can use apple or champagne vinegar.
To enhance the taste of the nuts, lightly toast the nuts. Just spread the nuts evenly in one layer on a baking sheet and bake for 5 to 8 minutes at 350 degrees. Watch them carefully so that they do not burn. Cool before adding to the salad.
