PINOT GRIS 2023 – 1 DOZEN

Our first vintage of Clandestine Vineyards Pinot Gris is sourced from a single, cool climate vineyard from the King Valley, Victoria.

Cool climate Pinot Gris is cold- pressed to preserve brightness and aromatics. The free-run juice is stabilised in stainless steel before partial barrel fermentation and maturation in old French oak puncheons (on lees) for four months. Lightly fined and with minimal sulphites prior to bottling.

This Pinot Gris pays homage to Alsace, albeit with a King Valley accent – a perfect match with many Chinese, Indian and Mexican dishes, or try with pungent washed-rind cheeses like Morbier, Raclette, Taleggio, Munster and Livarot.

CHARDONNAY 2021 – 1 DOZEN

Bright with a light green hue, the bouquet is an enticing mix of flintstone, cashew and citrus, this follows onto the palate with grapefruit intensity and depth of flavour, held in check by tightly wound acidity. The oak plays its part in a supporting role, which allows for a long clean and delicious finish.

HEARTS & MINDS CABERNET MALBEC 2021

This is a wine not the faint of heart; ‘Ali’ like grace with ‘Tyson’ power, the palate is awash with dark fruits, mocha chocolate and sarsaparilla colliding across the mid-palate, while generous fruit weight dominates mouthfeel. These elements are balanced by silky oak tannins, lending a multilayered, textured finish. Enjoy its youth by decanting prior to for enjoyment; or cellar for ten years to realise the full potential of this wine. Pair with slow roasted lamb shoulder, prime beef rib-eye and jazz.

SHIRAZ 2021 – 1 DOZEN

Vineyard Hayview Vineyard, Mount Barker WA, planted 2001, north-south facing rows, a hilltop with a southerly slope, loam over ironstone soils, pesticide and herbicide-free vineyard practices. Winemaking Machine picked, 7 days on fermentation on skins in open fermenters with hand plunging twice daily, natural cultured yeast, tank pressed, 10 months in seasoned French oak barriques on lees and then matured in stainless steel tank to settle prior to bottling. Tasting Notes Purple and bright in colour, floral and lifted spice bouquet with hints of oak. Cherries and red fruits collide across the palate with earthy, graphite notes giving added texture and interest. Sweet and savoury at the same time, the wine completes its palate journey with white pepper notes & fruit generosity while the older oak lends a rounded, soft, elegant and juicy long finish. Minimal filtration, vegan fined and minimal sulphur on bottling to keep the wine fresh and lively. Pair with winter braises, slow-cooked and/or smoked meats (American style brisket or short ribs), or northern Italian cuisine. CABERNET SAUVIGNON 2020 – 1 DOZEN

Vineyard Landsdale Vineyard, Mount Barker WA, planted 1996 east-west facing rows, ironstone gravel/loam soils, pesticide, herbicide-free vineyard practices. Winemaking Machine harvested, 10 days on fermentation on skins in open fermenters with hand plunging twice daily during ferment, reduced to daily and then weekly until the tannins were supple and integrated, cultured natural yeast, tank pressed, 16 months in seasoned French oak barriques. Tasting Notes Dark purple and bright in colour, with classic cool mint and lifted cassis bouquet with warm, cedar oak aromas. A brooding palate of blackcurrant, plums, chocolate and mocha flavours jostle for position, while a generous fruit ball forms in the mid-palate. Quality oak and time ensure long, soft and integrated tannin structure, wrapped in firm acidity - giving this Cabernet enhanced texture and complexity. Technical Minimal filtration, vegan fined and minimal sulphur on bottling to keep the wine fresh and lively. MOURVÈDRE ROSÉ 2022 – 1 DOZEN

This 2022, the third vintage of Clandestine Vineyards Rose follows a style of European, dry textural roses, rather than the plethora of juicy, off dry styles now all too common in Australia. A new single vineyard location in heart of McLaren Vale has been selected for it's warmer, maritime micro-climate and soils ideally suited to Mourvedre; the vineyard was planted in 2013 from cuttings of the original d'Arenberg clone. Harvested early for rose production, the colour of the final wine is due to the limited skin contact with the juice - in this case, in the picking bins only - no further maceration is required. The grapes are destemmed, crushed, cold pressed and the resulting bright pink juice is then stabilised in steel before being racked into older French oak barriques for 100% barrel fermentation; but not malolactic. When fermented to dry (bone dry) a very light surphuring ensues followed by a gentle fining - the resulting wine is a glorious light salmon colour with bright flouscents, a lifted perfume of exotic herbs, spice and mixed cherry - ripe, sour and maraschino. Subtle oak tones give mouthfeel and texture, crisp acidty frames and refreshes the palate with length inviting another sip! Pair with all manner of cuisines, particularly those that carry spice and heat; Asian flavours are favored - think Thai, Vietnamese or indeed Indian currys. Vegan too! (the wine, that is!)
